POHA

POHA


Ingredients


Beaten Rice / Poha– 2 Cups
Onion – 1 Large
Green Chillies chopped – 3
Mustard Seeds – 1 tsp
Fennel seeds– 1 tsp
Roasted Peanuts  with skins– 1/2 cup
Oil – 1 tbsp
Turmeric – 1/4 tsp
Sugar – 1/2 tsp
Chopped Coriander Leaves – handfull
Asafoetida – A Pinch
Curry Leaves – A Few
Lemon juice 1 tbsp
Salt to Taste


Method


Wash beaten rice and drain very well. Keep aside.
Chop the onions .
In a wok, heat the oil.
Add mustard seeds and let it splutter.
Add the peanuts .
Add  green chillies and fennel seeds.
Fry for a minute.
Add onions and fry till they turn transparent.
Add asafoetida, turmeric powder, salt, sugar, and curry leaves.
Stir fry for about a minute or till the sugar dissolves.
Add the beaten rice and sautee for 2 mins.
Garnish with  chopped coriander leaves.
Serve warm with drizzling of lemon juice.
