Stuffed Pranthas Masala Powder


 Ingredients

10 tbsp corriander seeds...
5 tbsp pomegranate seeds
2 tbsp cumin seeds
1 tbsp carrom seeds/ajwain
2 tbsp dry mint leaves
1 tbsp garam masala
1/2 tsp black salt
2 tbsp red chilli flakes

Dry roast all whole seeds.
Blend all ingredients in a blender and make fine powder.

Adjust seasoning after adding this powder to your stuffing.

The masala powder is ready for adding to any stuffing ( aloo, gobhi, moolo, keema etc) you make for pranthas.

You can use this as spice for normal masala prantha too w/o stuffing.

Homemade MADRAS CURRY POWDER

 
 
 
 
 

 

Ingredients:

5tbsp coriander seeds
3 tbsp. Bengal Gram
 2 tbsp mustard seeds
2 tbsp cumin seeds
1tbsp fenugreek seeds
3-4 dry red chilies
1 tbsp black peppercorns
2 tsp fennel seeds
2 inch cinnamon stick
1 and 1/2 tbsp. turmeric powder
2 tsp garlic powder
1 spring dried curry leaves
 

Method:

Dry roast whole ingredients  separately and ground to coarse powder with turmeric, garlic powder.

Crumble to dried curry leaves to the curry powder.

Store in airtight container upto 2 months in shelf and 4 months in freezer.

For best aroma, prepare in small batches.

Use this in every Curry you make. No need to add Extra spice . Just make onion- Tomato paste and add this powder in any curry

Home made Chaat Masala

Home made CHAAT Masala


Any Indian food or snack is incomplete without Chatpata Chaat Masala.
It takes any bland food to high level
It has many uses:-
1. Sprinkle over Fruit chsat.
2. Sprinkle in any Dahi Raita
3. Mix in Prantha stuffings
4. Can be used in Any kind of stir fry vegetables.
5. Sprinkle over Pakodas, Aloo Bonda, crispy potato wedges, Fish bhajia, roasted chicken , Kababs etc.
Many other uses.


Ingredients

Coriander seeds 4-5 TBSP
Cumin seeds 5 tsp
Ajwain/ Carrom seeds 2 tsp
kala namak/rock salt 3 TBSP
Dry Red  chiles 5-6
Amchur / dry mango pwdr 4 tsp
pinch of hing
Dried ginger powder 1/2 tsp
Black pepper Powder 1/2 tsp
Kashmiri red chilli powder 1 tsp( For bright color)


Method:

Roast the coriander seeds, cumin seeds and the carom seeds separately at a low flame for a few minutes only.
Remove from heat and let cool.
Combine all above  ingredients and grind into a fine powder.
Store in air tight clean container.
Best flavours upto one month.
So make fresh everytime.
