Veg Nargisi Kofta

Veg Nargisi Kofta.


Ingredients


Potatoes –3 medium
Paneer – 1 cup grated
Bread – 2 slices
Cumin powder – 1 tsp
Black pepper –1/2
Salt as per taste
Turmeric powder 1 tsp
Oil for frying the kofta
Lemon juice 2 tsp
Method
In a small bowl add mashed potato,. Add  cumin powder, black pepper, turmeric powder, lemon juice and salt. Mix well and make small balls.
Grate paneer and mash , put  in a bowl. Add crushed bread and salt. Mix very well and form a smooth dough if it.
Take each portion in your palm and place the potato ball in the center. Cover the filing completely and form an oval shaped koftas.
.
In a pan heat cooing oil and deep fry these koftas carefully till they are brown in color.
Serve with chutney.
You can make gravy and make curry also.

Kadai Paneer

Kadai Paneer

 

Ingredients

Panner/Cottage cheese 1/2 kg

 

coriander seeds - 1/2 tsp


cumin seeds - 2 tsp


garlic cloves - 5-6


dry red chillies - 5


tomato puree 1 cup


salt to taste


Turmeric powder 1/2 tsp


ghee - 2 ladles


Onion paste 1 cup

METHOD:-



1. In thick bottomed kadai , add 1 tsp ghee and heat till it melts. Fry coriander seeds, cumin seeds and garlic cloves. Let it cool and put in blender tumbler.

2. Then grind this along with long red chilles. Make a paste.

Heat rest of ghee in kadai and fry paneer pieces in it. Keep aside

3. In same ghee put onion paste and bhuno over medium heat till pink colour. Add chilli paste from blender and bhuno along with onions. Add turmeric powder and salt.

Bhuno for one min. Add tomato puree and simmer till ghee leaves sides.

Add paneer fried pieces and mix in masala. Add 1 cup water and let it simmer at low heat till all water evaporates and ghee leaves sides.

Garnish with ginger and green chilli strips

Paneer in Lemon Butter Sauce

Paneer in lemon butter Sauce


Ingredients


Paneer cubes 10-12 (
Melted Amul Butter 1/2 cup
Lemon juice 1/2 cup
Vegetable stock 1/4 cup
Chopped corriander 2 tbsp
Red chilli flakes 1 tsp
Garlic cloves 2 chopped
Green chilli fine chopped half
Turmeric powder 1/2 tsp


Method


Fry paneer cubes to light brown colour
Keep in warm water with turmeric powder and pinch salt in it.
For sauce, take pan and put over medium heat , add vegetable stock, lemon juice and garlic. Simmer for few secs.
Add slowly butter and continue stir for five mins.
Add chopped corriander znd green chilli. Mix and switch off flame.
Pick all panner cubes from warm water and arrange in serving dish . Pour butter lemon sauce over it. Sprinkle chili flakes.
Enjoy and hooked to this bursting flavours forever
You can pour this sauce in any steamed vegges, roasted chicken , steaks or zny cooked seafood

Almonds Paneer Rolls

Almonds Paneer Rolls


 

Ingredients

• 1/2 cup Cottage Cheese ( paneer)

• 2 tbsp powdered sugar

• 1 tbsp milk

• 2 tbsp crushed almonds

• few drops Vanilla essence

• 1/2 tsp green cardamom powder

 

Method

• Mix paneer well in a big bowl. Knead like a dough till you get oily texture in your hands

• Add the sugar, milk, crushed  almonds and vanilla  essence and again knead mix well.

• Add the cardamom powder and mix well.

• Divide the mixture i equal portions and shape each portion into small rolll.

• Sprinkle more crushed almonds over rolls .

• Refrigerate for two – Three hours

• Serve chilled.

 

You can use fresh CHENNA from Milk too.

Dhaba Palak Paneer

Dhaba Palak Paneer


Ingredients

1 kg Palak (spinach)...
1 cup cubes of Paneer
2 onions (chopped )
1/2 tsp cumin seed
2 garlic pods (crushed)
1tsp coriander powder
1 tsp red chilli powder
Pinch turmeric powder
Mustard oil for cooking
1 tsp desi ghee
Green chillies
Salt


Method

Blanch leaves of Palak in boiling water. Drain and blend to puree
Heat 2 tbsp oil ub kadahi and add chopped onions and cook till light brown in colour, add garlic .
Add chilli powder, turmeric powder , coriander powder and salt.
Sautee it at medium heat.
Add the Paneer and coat it with all the spices.
Cook for a minute.
Now add the pureed Spinach and bring it to a boil and switch off the flame.
Heat ghee in a pan and add cumin seeds, let it splutter and then add green chillies, immediately pour it on the Palak Paneer.
Serve with rotis

Paneer Malai Tikka

Paneer Malai Tikka



 INGREDIENTS

500g paneer...
1 tsp cumin powder
1 crushed green chilli
1 tbsp lemon juice
1/2 cup cream /malai
1/2 cup hung curd
2 tsp garlic paste
1 tsp black pepper
Salt

METHOD

Cut the paneer into cubes and grill / shallow fry in pan. Keep aside.

Mix cream, hung curd and all other ingredients well.

ADD in grilled paneer and leave to marinate overnite in refrigerator.

Next day takeout. When at room trpm. HEAT WOK and add 2 tsp butter. Add marinaded paneer with all marination.

Cook off on a medium to high heat for 10-20 mins.

Serve with rotis.

Son In Law Matter Paneer

 

This is made in many dogra families.

As there should be a smooth grvy and lots of big paneer cubes to show extra love.

 

 

Ingredients

 

Paneer big cubes-1 cup

Mattar(peas)-1cup

Grated Onion -1

Grated Tomato-2

Ginger garlic paste -2tbsp

Cumin seeds-1tsp

Bay leaf -1

Turmeric powder-1tsp

Coriander powder-2 tsp

Red chili powder-1/2 tsp

Kasoori methi-1/2 tsp

Salt to taste

Coriander leaves

Mustard Oil

Freshly roasted and grounded cumin seeds 1 tsp

Desi Ghee - generous

 

Method:

 

Heat oil a kadai. Fry paneer cubes .

Keep in bowl of warm water with pinch turmeric powder.

Dry roast kasoori methi snd keep aside.

Boil peas in water with pinch baking soda. This way they retain green colour.

 

Heat 2tbsp oil in kadau add cumin seed when they starts crackle add bay leaf and onion sauté for few minutes and add tomato and sautee till oil leaves sides.

 

Add ginger garlic paste and fry till pink colour.

Add turmeric powder,red chili powder, coriander powder and salt mix well.

 

Add paneer, peas and 1 cup of warm water and bring to boil.

Cover and cook for few mins.

 
 

Add roasted kasoori methi and cook till thick gravy forms.

Sprinkle roasted grounded cumin seeds.

 

Turn off the heat and garnish with coriander leaves snd pour desi ghee.

Serve hot with rotis.

Lehsun dhaniya Paneer

Lehsun dhaniya Paneer
 


 Ingredients

Paneer 250 gms...
Lehsun paste 3 tsp
Chopped corriander handfull
Cumin seeds 1 tsp
Corriander seeds 1 tsp
Red chilli powder 1 tsp
Turmeric powder 1/2 tsp
Dry red chilli 1
Green chilli 1
Salt
Ghee /butter 2 tbsp

Method

In a wok heat ghee and fry paneer cubes.

Keep aside.

In same wok add cumin and corriander seeds. Crackle.

Add lehsun/garlic paste

Stir for few secs.

Add paneer cubes.

Add salt, red chilli powder, turmeric powder and corriander leaves.

Add green and dry red chilli

Stir fry for few mins at low heat till all masala covers paneer cubes

Aaloo Paneer

AALOO PANEER twist


 

Ingredients

Grated Paneer- 1 cup

Potatoes 2 Big

Ginger -finely chopped- 1/2 tsp

Garlic -finely chopped- 1/2 tsp

Onion -chopped- 1 medium sized

Dry red chilli 1

Red chili powder-1/4 tsp ( or to taste)

Turmeric powder-1/4 tsp

Coriander powder-1/2 tsp

Tomato-finely chopped- 1 small

Coriander leaves- chopped- 1 tbsp

Garam Masala 1/2 tsp

Salt to taste

Oil 3 tbsp



Directions

Peel and Cut potatoes in small cubes. In a Pan heat oil and fry potatoes cubes. Keep aside.

  • In same Pan  Add ginger and garlic. Saute until raw smell leaves.

  • Next add onion and dry red chilli. Saute until onion turns pink

  • Reduce the flame to low and add red chili powder,turmeric powder,coriander powder and garam masala.Saute for few seconds and add chopped tomato. Cook until it is soft.

  • Add grated paneer and salt to taste. Mix well until combined.

  • Add Fried Potatoes   . Mix well.

  • Cover and cook for about 2 to 3 minutes. Remove the lid and stir well,cook for another 2 or 3 minutes.

  • Serve with Rotis

PANEER TIKKA MASALA

NO ONION
PANEER TIKKA MASALA



For marinade...

 Paneer- 1/2 kg
Thick Yoghurt whisked -2 cups
Lemon Juice-1 tbsp
Ginger paste-1 tsp
Garlic paste -1 tsp
Garam Masala-1 tsp
Turmeric pwdr-1/2 tsp
Red chili pwdr 1 tsp
Salt-to taste


For the gravy

  tomato puree-3 cups
Ginger paste-2 tsp
Garlic- paste 2 tsp
Cumin seeds -1 tsp
Coriander pwdr -1 tsp
Garam Masala-1 tsp
Turmeric-1/2 tsp
Water-1/2 cup
Kasoori methi (dried fenugreek)-1 tbsp
Butter-1 tbsp
Oil-1 tbsp
Salt-to taste

Method

Cut paneer in tikka cubes
In a bowl marinade the paneer cubes along with all the ingredients and let it sit in the fridge for 2 hrs.
Place the marinated paneer onto a foil lined greased baking sheet and grill or broil until golden.
Keep aside.
In a pan heat the butter and oil and add the ginger and garlic paste
Saute for 1-2 mins
Add the tomato puree and all the spices, salt
Cook on medium for about 4-5 minutes.
Add the water and continue to cook for about a minute.
Add the kasoori methi.Check the seasonings.
Add the paneer into the sauce and simmer for about 8-10 minutes
Serve with rotis
